Baking is a passion.  Bite Me Bakery was conceived and became an idea when I met my life partner, John.  There is a restaurant that I have been a regular at for a long time.  John was a new manager there and worked nights and it was Christmas time and I always make cookies and treats to send to my kids and family members out of state and thought I would make some for the staff there.  I asked if anyone had allergies and one of the servers who is a friend told me that their new manager John had Celiacs disease.  I accepted the challenge, went home did some research, and went to work converting recipes that I had been using forever to gluten-free recipes.  I had no experience in gluten-free baking.  It wasn’t covered when I went to culinary school because it was a long long, time ago and it wasn’t really something that existed at the time.  Well, I baked them, he loved them and was so excited he was smiling from ear to ear.  He told me that he hadn’t had homemade baked goods for over ten years which was when he was diagnosed and that they were delicious.  His joy was contagious and a seed was planted and I have spent the last six years working and developing and perfecting gluten-free treats that are delicious.  My goal is to give a little bit of taste like mom’s back to people that cannot have gluten.  Everyone deserves to have a smile like his when it’s time for treats.
